SPELT SOURDOUGH (Biodynamic / Organic)
Our Spelt Sour Dough is "House Milled" from 100% Biodynamic & Organic grain from Murrayville in western Victoria. We use a mixture of House Milled white spelt flour, as well as some Wholegrain spelt flour to increase the health & nutritional benefits of this beautiful bread. It has a lovely earthy flavour, and is beautiful toasted with salted butter and Apricot jam.

SPICED FRUIT & CONFIT ORANGE fruit loaf
We start this recipe by cooking whole Australian oranges in a sugar solution for 3 days with lots of star anis and cardamon. (confit orange) then we puree the entire orange, and fold it through lots of Australian sultanas and currants. We leave this fruit mix for 2 days to marinate before adding it to a sweet spicy dough. once we remove it from the oven we glaze it with the syrup we cook the oranges in. All good things take time!!

Made with Chris Sharkey's single estate Sceptre wheat farmed in Bacchus Marsh. We don't only go to the farm every month to pick up this amazing locally grown wheat, we mill it, sprout it and make this semi dense Sour Dough bread which has a soft crumb and a lovely nutty finish.

Our Baguette is a traditional French recipe. A three day process which starts with a 18 hour poolish, this creates a sweet fermented flavour, with a soft texture and a crisp crust. Please note these come out of the oven at 9am!

Like our Spelt loaf, This House Milled Wholegrain Loaf is 100% Biodynamic / Organic. The crumb structure on this naturally low GI bread, is quite dense due to its high bran and germ content. Also House Milled from grain sourced from Murrayville, north western Victoria.

SUNDAY ONLY. A blend of House milled organic rye flour and white flour is used to make this traditional Eastern European loaf. It has a strong earthy flavour, and is well suited to cheeses and sliced meats. Also available without walnuts.
